The Best Vegetable Stock

Although stocks made with proteins have more flavor, vegetable stock is more versatile. It can be used it pretty much everything. To make a good vegetable stock, you basically need the most fundamental ingredients which include, garlic, onion, celery, carrots, leeks, thyme and bay leaves. There are some people who add tomatoes, but there is an argument that states tomatoes make the stock murky. Therefore, we will leave them out. I believe the best vegetable stock is a “white” stock, in other words where the vegetables are not sautéed or caramelized, but rather added with the water at the same time and brought to a boil. We will combine all ingredients and simmer between 30-45 minutes and strain. This stock, as mentioned before, has a variety of utilization’s from soups to rice. Be sure to use this recipe next time you have stew or soup in mind.

For stock

1 spanish onion

2 carrots chopped

2 ribs celery chopped

1 head of garlic

3 sprigs of thyme

3 bay leaves

1 leek chopped and rinsed thoroughly

5 cups of water

combine all ingredients in a pot and simmer for 30-45 minutes.
