The best marinara sauce

I believe a good marinara sauce comes from fresh but overly ripe tomatoes, preferably from the garden. But of course not all of us have tomatoes in our garden. We can substitute some store bought tomatoes that are very ripe. This marinara recipe also uses tomato paste to help with the dark red color( fresh tomatoes tend to look more pale in color).


Marinara sauce


3 cloves of garlic

¼ spanish onion chopped

2 bay leaves

3 roma tomatoes (past ripe)

2 tableapoons tomato paste

1 tablespoon fresh thyme.leaves

1 tableapoon oregano

⅓ cup fresh basil(added at the end)

2 cups water


Heat sauce pot with 1 tableapoon olive oil. Add garlic and sautee until light brown. Add onion and sautee until translucent. Add thyme, bay leaves, and oregano and sautee for 1 minute. Add roma tomatoes and tomato paste. Add water and simmer for 1 hour. Let cool and blend with fresh basil.
