The Best Giardinera
Having a giardinera in the fridge handy is a great resource. Giardiera can be used on Italian sandiwiches, sausages and also charcuterie boards. There are many varieties of giardinera, but having a mix of hot peppers and olives is a true enhancement to the relish. For this recipe we will be using Thai chiles as well, but traditionally jalapeños are used.
For the giardinera
1 carrot peeled and diced
1 rib of celery diced
2 cloves of garlic minced
10 Thai chiles, crushed or minced(you can combine this with the garlic in a food processor or by hand)
1/2 cauliflower
1/2 cup chopped Spanish green olives
1 cup distillled white vinegar
3 tablespoons of salt
3 tablespoons of olive oil
Bring vinegar and salt to a boil. Meanwhile, combine all other vegetables in a bowl. When vinegar comes to a boil, pour over vegetables. Add olive oil and mix. Place in a jar.
