The Best Enchilada Sauce
There are basically 2 kinds of enchilada sauce; red and green. Within these two types there of course are different variations. The green sauce is typically made from tomatillos, garlic, onions and cilantro blended together although I have seen a variation with peas as the main ingredient. The red version is usually composed of guajillos and onions and garlic. I believe the more variations of chiles the better as it adds levels of flavor for all of the different peppers similar to the concept of mole. Here is a recipe that works well the next time you are craving enchiladas.
2 guajillos
2 anchos
2 tomatoes
2 arbol chiles or japones chiles
1/4 spanish onion chopped
2 cloves garlic
2 cups of water
Salt to taste
Simmer all ingredients for 10 minutes. Let cool and blend. Adjust thickness or thinness with water.
