Spicy Pickled Cabbage

Pickled cabbage is a great accompaniment to have handy in the fridge, from tacos, to sausages, pickled cabbage has a big spectrum of functions. As it can be stored in the fridge for 6 months you can make a batch and use it as necessary. For this interpretation you can either use coleslaw mix of finely chop cabbage of your choice; Napa or green.

8 oz cabbage chopped

3 cups distilled vinegar

1 cup water

3 tablespoons kosher salt

1 jalapeño diced

2 chiltepin or árbol chiles

Put cabbage mix in a large bowl

Bring to a boil all other ingredients. Pour liquid over cabbage and let cool. Once cooled place in jar and use for the next stir fry
