Simple chicken cacciatore
1 lb of chicken diced
1/4 cup diced onion
1 tablespoon of thyme and oregano
3 cloves of garlic chopped
place in bowl with 1 tablespoon of olive oil, mix and let marinate for at least 8 hours
2 cups marinara sauce
1/2 cup sliced green olives
2 tablespoons capers
1/4 cup chopped basil
1/2 pound of your favorite pasta cooked
heat a skillet and sautéed chicken (try to get a browning as this adds flavor)
deglaze with 1 cup water(or white wine)
when mixture is reduced to almost nothing(about 2 tablespoons) add marinara and heat
once marinara is hot add pasta, olives, capers and basil and mix
add fresh parmesan cheese and basil as garnish
