Shredded Pork Bowl
Spring is around the corner, and eating healthy and light is on everyone’s mind. This is a perfect way to satisfy those cravings. We will use a shredded pork as the protein but can be substituted with chicken or fish if that is your preference.
1/2 cup mayocoba beans, or any kidney or pinto will do
2 leaves Swiss chard
1/2 carrot diced or sliced
1/2 Roma tomato chopped
2 radishes sliced
2 broccoli florets or cauliflower will do
cilantro for garnish
1/2 cup shredded pork
1/4 simple vinaigrette,(1/3 acid, 1/3 olive oil, 1/3 chopped cilantro/water and whole grain mustard)
assemble all ingredients and add vinaigrette or your favorite dressing.
