Red chile chicken

We will be using two recipes from the blog that appear prior; taco seasoning and enchilada sauce.

For the red chile chicken

1 pound of chicken thighs or breasts, cut to bite size pieces. Tossed with 5 tablespoons of taco seasoning. Cover and let marinate for at least 8 hours.

Heat cast iron skillet with 2 tablespoons oliveoil. Season chicken with salt and pepper. Once the skillet starts to smoke add the chicken and let seat hard on 1 side for about 1-2 minutes. Stir the chicken and let cook another 2 minutes. Add 1 cup of enchilada sauce and reduce to simmer for 10 minutes.

Add queso fresco and cilantro as a garnish of you would like.
