Green Onion Chimichurri

Green onion chimichurri

Chimichurri is a sauce/dressing that is from South America. Some will argue it is Argentinian, while other‘s will claim it’s from Uruguay. Nontheless, it is a traditional accompaniment for steak in this region.

Normally it calls for cilantro, oregano, shallot, garlic, red wine vinegar and olive oil.

In this version we will add chopped green onion and substitute lemon zest and juice(almost like gremolata) for the red wine vinegar. This color will help give it a pop of color you can take advantage of.

1 tablespoon minced garlic

1 tablespoon minced shallot

1 table spoon oregano(Prefferably fresh and chopped, but can be dry)

1 lemon zested and juiced

¼ cup chopped green onions(scallions)

¼ cup chopped cilantro

¼ cup olive oil

Salt n pepper to taste

Accompany with favorite cut of beef, lamb, or pork.
