Cilantro and Scallion Gremolata



Gremolata is traditionally an Italian accompaniment with original ingredients garlic, lemon, olive oil, garlic and parsley. It can be used to top beef or fish and is the perfect accompaniment for both as it provides 3 of the best innate flavors; garlic, lemon and olive oil.

I spent a few months working at a Michelin star restaurant in San Sebastian, Spain and they would drizzle a garlic, lemon, and olive oil mix over every cut of meat as soon as it came out of the oven. Here is a interpretation to the traditional version as I believe scallions and cilantro have a more interesting flavor than parsley, plus cilantro and scallions can always be combined in many cuisines; vietnamese, Thai and Mexican.

1/4 cup scallions chopped

1/4 cup cilantro chopped

1 lemon zested

2 tablespoons lemon juice

2 cloves of garlic minced

5 tablespoons of olive oil

salt and pepper to taste
