Celery Leaf Pesto


Wondering what to do with the leaves from a celery stalk. One option would be to mix them with a salad, another option would be to utilize them for a flavorful and unique pesto. Pesto is usually made with basil leaves and pine nuts, but in those version, we will substitute these two items.

2 cups celery leaves

1 lemon, zested and juiced

1/4 cup roasted peanuts

1/4 cup parmesan cheese

1/4 olive oil

salt and pepper to taste


Using a food processor blend all ingredientes. You can adjust the thickness by either adding more oil or a little water to make the pesto runnier. If the overall taste is too bitter you can always nullify it with a bit of honey. Sweetness counteracts bitter flavors.
